Tomato salsa
We love Chef Sally's vibrant tomato salsa recipe, it's simple to make and takes no time at all. The addition of smoked paprika gives it a lovely smoky flavour and the chilli gives a great punch! Feel free to leave out the chilli if you prefer your salsa on the milder side.

Ingredients
- 200g cherry tomatoes
- 3 large tomatoes, roughly chopped
- 1 red onion, roughly chopped
- 3 garlic cloves, peeled
- Handful of coriander, roughly chopped
- 10 sundried tomatoes
- 1 red chilli, roughly chopped
- 2 tsp sherry or red wine vinegar
- 1 tsp smoked paprika
- 1 tsp dried chilli flakes
- 1 tsp caster sugar
- 2 tsp sea salt
Cooking instructions
- Place all the ingredients into a food processor and blitz together, it’s as simple as that! Give it a taste and add more seasoning as required. Enjoy!
Chef's tip
We love a mix of different fresh tomatoes but you can use any tomatoes you have (about 350g total weight).
The fresh chilli and dried chilli flakes make this quite a spicy salsa, so reduce each to half if preferred for a milder taste or leave one or both out altogether.
This makes a large bowl for sharing – we love ours with tortilla chips or to serve with a Mexican-style feast!
