We think Gordon’s signature beef Wellington really is the ultimate dish, so why not come and learn the ultimate menu for serving your own Welly feast at home. In this cooking class you’ll have plenty of time to master the Wellington itself, plus sauces and sides, all between making a stunning starter and dessert.

What to expect

In an Ultimate menu class we want to show you the best of the best. Classic dishes and recipes that will always impress, brought together in the most delicious meal you’ll love cooking for friends and family.

If you’re cooking a Wellington at home, you’ll want to go all-out and make it into an amazing meal. Our chefs have paired the Welly with a delicious seasonal starter and luxurious dessert to make the ultimate menu you can serve up for friends and family. You’ll have your starter for lunch while at the Academy, but have your finished dessert to take home with you, ready to complete your at home feast. 

With the Wellington, you’ll master all those classic layers of pastry, mushrooms, pancake and beef, served with sauces and sides, too. You’ll head home with your own Wellington ready to cook when you like, with slices from our chef’s own to try in class. 

Class details

Class starts: 10am, arrive anytime from 9.30am to check in at reception

Class finishes: 3-3.30pm, depending on lunch break and time to finish dishes

Class size: Maximum 12 guests, some elements may require working in pairs with a classmate, don’t worry if you’ve come alone – it’s a great way to meet new people and have a laugh

Typical recipes and skills (we’ll cook the best available on the day, so we might surprise you!):

  • How to make Gordon’s beef Wellington
  • Searing and cooking the beef
  • Making crêpes and mushroom duxelles
  • Assembling the Wellington with baking instructions to take home
  • Creamy mashed potato, glazed carrots and red wine jus
  • Seasonal starter, such as a creamy mushroom risotto or fish dish
  • Luxurious dessert to take home, perhaps a classic poached pears Belle Helene, gorgeous summer trifle or a rich bread and butter pudding

  • We will provide takeaway containers to take your Wellington and dessert home in but we recommend bringing your own containers if you can or if you're travelling far!
